One of Lake Norman's popular waterfront restaurants, Hello, Sailor, gave us first-hand access to one of their coveted side dishes. Whether you're new to the cooking scene or an experienced home chef, this Avocado Coleslaw is one your guests will certainly enjoy next time they're over for dinner!
Serves 6-8 people
6 cups thinly sliced green cabbage, packed (approximately a ¼ head)
2 cups loosely packed sliced red onion (¼ onion)
1/3 cup loosely packed chopped cilantro
1 whole ripe avocado
1/2 cup mayonnaise
Juice of 2 limes
1 tablespoon salt
1 teaspoon black pepper
Combine sliced cabbage, onions and chopped cilantro in a large mixing bowl and set aside. In a food processor, combine avocado, mayonnaise, lime juice, salt and pepper. Blend till smooth. Add dressing to the cabbage mixture and stir till combined. Taste for seasoning and serve immediately or make up to 6 hours ahead of time.
